Servings 4

  • 4 large eggs
  • 1/3 cup milk
  • 1 tbsp whole wheat flour
  • 1 cup shredded mozzarella cheese
  • 1 cup frozen mixed vegetables
  • 1/2 cup frozen spinach
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tisp black pepper
  • 1 pie crust

  1. First, gather all ingredients and add them into a large bowl for mixing. The order does not matter. You can also add more spinach and vegetables into the mix if you love vegetables! Just make sure there are still liquids visible in the mix once fully mixed together.

  2. Mix all of the ingredients well with a whisk or fork.
  3. Empty the quiche mixture into a pie crust. You may use a gluten-free pie crust if you'd like.
  4. Bake at 360 degrees for 1 hour. Use a fork to pinch and make sure the egg mixture is fully cooked. It's normal if there are some juices in the quiche still, however most of the quiche should be cooked at this point. Leave the quiche in the oven for a few more minutes if you want it a little firmer.
