Do they eat Enchiladas in Mexico?

You bet!

In fact, this recipe was inspired by a trip to Mexico that I took with my little family. We stayed at my husband’s family home in Mexico City and my hubby’s mom made us chicken enchiladas.

Oh man, were they good!

The natural ingredients in the tomatillo sauce give the enchiladas a kick. There is no way this recipe would taste the same with canned tomatillo sauce, however I won’t judge if you decide to use a canned sauce instead of our homemade sauce recipe.

Are homemade enchiladas expensive?

This recipe is not expensive.

I would say the most expensive ingredients would be the chicken and the green tomatillos.

Corn tortillas are not hard to find and you can buy a large quantity for not much money(that will last you a while).

Let’s take a look at the Homemade Chicken Enchilada Recipe.

Ingredients

  • Tomatillo Sauce( whether you want to use our homemade tomatillo sauce recipe or you purchase/make your own, either will work)
  • Queso Fresco-for sprinkling
  • Shredded, Cooked Chicken breast(2-3 breasts)-we used 1 rotisserie chicken and shredded the breast
  • Corn tortillas( as many as you may need-if you purchase 1 large package of corn tortillas, that should be enough)
  • Olive Oil( to drench the corn tortillas with)

Step by step how to make Homemade Chicken Enchiladas

Step 1

Begin by shredding cooked chicken breast and setting it aside. We used a rotisserie chicken and shredded the breast part. You can boil chicken breasts and then shred the breast after the chicken is cooked.

Step 2

Warm up your tomatillo sauce, whether you use our homemade tomatillo sauce or make/purchase your own. Our natural, homemade sauce is amazing with this recipe so I highly recommend!

Step 3

After you have shredded the chicken breast and set it aside and have warmed up the tomatillo sauce, drizzle some olive oil into a pan. Let it heat up on low heat.

Step 4

Take 2-4 of your corn tortillas and drench them in the olive oil sitting on the pan, as they heat up slowly.

Step 5

Take your corn tortillas and add a handful or less of shredded chicken inside each tortilla. Sprinkle the chicken enchiladas with queso fresco to top them off.

Step 6

Roll them up with the chicken breast inside. Place on a plate and pour some of your warmed tomatillo sauce over the warmed tortillas. I like to pour quite a bit of sauce on there.

Ingredients

  • 3-4 cups tomatillo sauce to pour over the enchiladas (can use homemade or canned sauce-we recommend using the homemade tomatillo sauce on our blog!)
  • 1 queso fresco for sprinkling
  • 2-3 shredded, cooked chicken breasts (1 large rotisserie chicken or 2-3 chicken breasts)
  • 1 package At least 12 corn tortillas
  • olive oil to drench the corn tortillas in

    Instructions

    5. Once they are warmed and drenched in olive oil, they will be flexible and easy to roll up without breaking. Take your corn tortillas and add a handful or less of shredded chicken inside each tortilla.

    6. Roll them up with the chicken breast inside, place on a plate and pour some of your warmed tomatillo sauce over the warmed tortillas.
