What is something simple that you absolutely love to eat? I know on the days I am trying to figure out what to make for dinner for my family, sometimes a bean and cheese quesadilla is all I can think about making. It’s easy, it’s healthy and nutritious for the kids and we love it around here!

How is the bean and cheese quesadilla recipe easy and inexpensive?

The bean and cheese quesadilla recipe is just that: easy and inexpensive!

Should I use mozzarella or cheddar cheese?

You can decide which cheese to use.

We like to use shredded mozzarella cheese in our quesadillas.

Did you know mozzarella cheese contains more calcium than cheddar cheese, while cheddar cheese contains more sodium and fat?

That being said, we like to use mozzarella most of the time around here and it pairs delicious with the mashed beans all sandwiched between 2 warmed corn tortillas.

Ingredients

Step by Step how to make the bean and cheese quesadilla recipe

Step 1

Take two corn tortillas and heat them up on griddle cookware-I especially recommend a griddle or nonstick pan. 

Heat the tortillas up on both sides before you begin to add the cheese and beans. I usually heat up 2-4 corn tortillas at a time.

Step 2

Add the cheese and then spoon in the mashed beans over one of the corn tortillas.

Step 3

Sandwich the filled tortilla with another warmed corn tortilla.

Step 4

Flip over the quesadilla with a turner a few times until the cheese is fully melted between the tortillas.

And… you’re done! Make as many quesadillas as you’d like: about 16-20 tortillas will serve 4 people for a full meal.
